| 目的 对负载植物精油微胶囊可食性复合膜的应用进展和保鲜机理进行综述,探究负载植物精油微胶囊可食性复合膜在食品保鲜领域的应用价值。方法 以可食性膜为出发点,系统阐述负载植物精油微胶囊可食性复合膜的核心构成要素,即微胶囊的芯材、壁材、制备方法以及复合膜的制备方法和保鲜应用,并深入分析其保鲜作用机理。结论 负载植物精油微胶囊可食性复合膜的保鲜性能得益于微胶囊的缓释特性、植物精油的抑菌性、抗氧化活性和可食性膜的保鲜作用,并提出应该加强这四者的协同效应对保鲜性能影响的研究,指出了负载植物精油微胶囊可食性复合膜的研究方向,为高效保鲜材料的开发提供理论参考和实践指导。 |

| The work aims to summarize the application progress and preservation mechanisms of edible composite films loaded with plant essential oil microcapsules and explore their value in the field of food preservation. Starting with edible films, the core components of these composite films were systematically elaborated, including the core materials, wall materials and preparation methods of microcapsules, as well as the preparation methods and preservation applications of the composite films. Furthermore, an in-depth analysis of their preservation mechanisms was provided. The preservation performance of these films benefit from the sustained-release properties of microcapsules, the antibacterial and antioxidant activities of plant essential oils, and the preservation effects of the edible films. The work suggests that future research should focus on strengthening the study of the synergistic effects of these four factors on preservation performance. Potential research directions for edible composite films loaded with plant essential oil microcapsules is outlined, offering theoretical references and practical guidance for the development of high-efficiency preservation materials. |
